    Chicken Club Bake

    All the flavours of a clubhouse sandwich baked into one cozy dish. I added cheese because what's a proper "bake" without it? This Chicken Club Bake comes together in about 30 minutes and makes great leftovers for lunch. Just slice and plop on top of a salad for a clubhouse salad. A quick and easy recipe the whole family will love.

    🥘Ingredients and Substitutions

    All labeled ingredients to make chicken club bake.

    Chicken - Boneless, skinless chicken thighs work just as well. Adjust the cooking time slightly by adding an extra 5 minutes or so to the baking time, depending on their size.

    Spinach - Swap baby spinach for regular spinach, kale or Swiss chard. If using heartier greens chop or tear into smaller pieces and let them cook a bit longer until tender.

    Tomatoes - Use any ripe, firm tomatoes, even cherry or grape cut in half. Sundried tomatoes (in oil, drained) will add a more intense flavour if that's your jam.

    Cheese - I love the flavour of cheddar but mozzarella, Monterey Jack or Swiss are great alternatives. A sprinkle of parmesan offers a lower fat option.

    Bacon - Try turkey bacon of prosciutto for a lighter or saltier version. You can also skip it altogether and add a pinch of smoked paprika to mimic that smoky taste.

    Add-ins - Thinly sliced onions would be delicious as well as some sliced avocado (after baking). You could also try spreading some pesto on the chicken breasts before adding the toppings.

    🔪How to Make Baked Chicken Club Casserole

    Step 1: Cook bacon until crisp.

    Step 2: Sear chicken breasts until golden brown.

    Spinach, chicken breasts, sliced tomatoes and bacon being layered into a casserole dish.

    Step 3: Cook spinach in frying pan and add to casserole dish. Add chicken breasts and top with sliced tomatoes and bacon.

    Step 4: Top with grated cheese and bake for 20 minutes or until chicken reaches an internal temperature of 165°F. Now you are ready to enjoy a delicious chicken clubhouse bake!

    Expert Tips

    Read the recipe first: It's always helpful to read through once or twice before beginning.

    Prepare your "Mise en Place": Have all ingredients chopped, measured, and ready to go for a smooth process.

    Use a meat thermometer: Using an accurate meat thermometer not only takes the guess work out of when your protein is cooked but also allows perfectly cooked meat that isn't overcooked and dried out.

    Searing adds flavour: Don't skip this step. Browning the chicken adds more flavour to the overall dish.

    Rest before serving: Let the dish rest for 5 minutes after baking. This helps the juices redistribute so the chicken stays moist.

    Choose the right dish: A casserole or baking dish that just fits the chicken breasts is ideal for even cooking and locking in moisture.

    Can I use chicken thighs instead of chicken breasts?

    Yes! Boneless, skinless chicken thighs work perfectly in this recipe. They're a bit juicier and more forgiving than breasts. Just add a few extra minutes to the baking time if needed. The internal temperature should reach 165°F (74°C).

    Can I make this Chicken Club Bake ahead of time?

    Absolutely. You can assemble the dish up to a day in advance, cover it, and refrigerate until ready to bake. Add about 5 extra minutes to the baking time if it's going into the oven cold. Leftovers also reheat beautifully in the oven or microwave.

    What should I serve with Chicken Club Bake?

    This recipe pairs well with just about anything. Try it with a simple green salad, roasted potatoes, rice or your favourite grain for a complete meal. Or slice up the leftovers and serve them cold over salad greens for an easy next-day lunch.

    Chicken Club Bake

    An easy Chicken Club Bake with juicy chicken, crispy bacon, spinach, tomato, and melted cheddar. A 30-minute one-dish dinner everyone will love.

    Ingredients

    • 4 slices bacon
    • 4 boneless skinless chicken breasts
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 142 g baby spinach (8 to 10 cups loosely packed)
    • 3 to 4 Roma tomatoes cut into 12 to 16 slices
    • 1 cup grated cheddar cheese (115 g)

    Instructions

    • Preheat oven to 375°F (190°C).
    • Heat a medium skillet over medium heat and cook bacon until crispy. While the bacon cooks, season chicken on both sides with salt and pepper. Transfer bacon to a paper towel-lined plate to drain and increase heat to medium-high.
      4 slices bacon, 4 boneless skinless chicken breasts, ½ teaspoon salt, ¼ teaspoon black pepper
    • Sear chicken for about 5 minutes per side, or until golden brown. Transfer to the plate with bacon.
    • Add a splash of water to the pan and scrape up any browned bits. Add spinach and cook, stirring occasionally, until wilted.

    • Spread spinach in a casserole dish large enough to hold all 4 chicken breasts. Arrange chicken in a single layer over spinach, then top each with a slice of bacon, tomato slices, and cheese.

    • Bake for 20 minutes, or until the internal temperature reaches 165°F (74°C). Remove from oven and let rest for 5 minutes before serving.
